Here’s to Our Heritage, Health and Healing!
Data is showing that African-Americans are dying from health related diseases, cancer, diabetes, high blood pressure and strokes. Recent research is showing that we have the answer to many of our health programs, eating a greens based diet. Collard greens is said to be one of the #1 cancer fighting foods. By cooking collards we release their cancer-fighting enzymes. Steaming and sauteing vs boiling help to retain the compounds that ward off cancer.
Collard greens along with other foods our African and African-American ancestor ate i.e. yams, okra, black eyed peas, beans, rice, eggplant, watermelon, berries, and peanuts, fish, and chicken (without pork or red meat) can be the foundation of a diet that can give our bodies a fighting chance at overcoming many of the diseases we are suffering from.
